Ingredients

  • 370g – 400g fresh enoki mushrooms
  • 1 spring onion, finely chopped
  • 3 garlic cloves, minced
  • 3 tbsp tamari
  • 2 tbsp avocado oil
  • 1 tsp sesame oil
  • 1/2 tsp monk fruit (or sweetener of preference)
  • 1-2 cups vegetable stock (just enough to cover mushrooms)
  • Sesame seeds to serve

Directions

  1. Step 1: Prep the Mushrooms
    Chop the bottom off the enoki mushrooms and place them into a bowl.
    Cover with hot vegetable stock and leave for a few minutes to soften. Loosen up the pieces gently with your hands.
  2. Step 2: Make the Garlic Tamari Sauce
    Warm avocado oil and sesame oil in a pot over low-medium heat.
    Add garlic and sauté for just 10 seconds (we’re not browning it, just releasing flavour!).
    Quickly stir in tamari, monk fruit sweetener, and spring onion. Turn off the heat and mix well.
  3. Step 3: Assemble & Serve
    Drain the enoki mushrooms and gently separate them.
    Place them in a serving bowl and drizzle the tamari sauce over the top.
    Garnish with sesame seeds and any fresh herbs you like.
    Enjoy immediately with your favourite greens and/or over cauliflower rice!
