Ingredients
  

Roasted Cauliflower

  • 1.7 kg Whole Cauliflower cut into florets
  • 1 tsp smoked paprika
  • 1 tsp garlic powder

Cheesy Sauce

  • 1 cup coconut milk canned
  • 1` cup almond milk
  • 1 1/2 tsp dijon mustard
  • 1 tsp miso paste
  • 1 tsp onion powder
  • 1/2 lemon, juiced

To Bake

  • 1 tbsp tapioca flour
  • 1/3 cup fresh chives finely chopped

Topping

  • 1/3 cup almond meal or crushed walnuts
  • 1 1/2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • pinch of salt

Instructions
 

Roast the Cauliflower

  • Preheat oven to 200°C (400°F).
  • Toss cauliflower florets with olive oil, garlic powder, smoked paprika, salt & black pepper.
  • Spread evenly on a lined baking tray and roast for 20 minutes, until slightly golden and tender.

Make the Cheesy Sauce

  • In a blender/processor/nutribullet, combine coconut milk (or almond milk mix), nutritional yeast, Dijon mustard, miso paste, garlic powder, onion powder, lemon juice, almond milk, salt & black pepper. Blend until smooth.
  • Stir in chopped chives (do not blend them!).
  • Whisk tapioca with a little of the sauce, then mix through into the rest of the liquid.

Assemble & Bake

  • Place roasted cauliflower in a large baking dish.
  • Pour the cheesy sauce over the cauliflower, ensuring it coats evenly.
  • In a small bowl, mix almond meal, nutritional yeast, olive oil, smoked paprika, and salt. Sprinkle over the top.
  • Bake at 200°C (400°F) for 15-18 minutes, until golden and bubbly.
  • For extra crispiness: Finish under the grill (broiler) for 2-3 minutes. (optional)

Serve & Enjoy!

  • Let sit for 5 minutes before serving to allow the sauce to set.
  • Garnish with extra fresh chives and serve warm.
