Ingredients
Roasted Cauliflower
- 1.7 kg Whole Cauliflower cut into florets
- 1 tsp smoked paprika
- 1 tsp garlic powder
Cheesy Sauce
- 1 cup coconut milk canned
- 1` cup almond milk
- 1 1/2 tsp dijon mustard
- 1 tsp miso paste
- 1 tsp onion powder
- 1/2 lemon, juiced
To Bake
- 1 tbsp tapioca flour
- 1/3 cup fresh chives finely chopped
Topping
- 1/3 cup almond meal or crushed walnuts
- 1 1/2 tbsp nutritional yeast
- 1 tsp smoked paprika
- pinch of salt
Instructions
Roast the Cauliflower
- Preheat oven to 200°C (400°F).
- Toss cauliflower florets with olive oil, garlic powder, smoked paprika, salt & black pepper.
- Spread evenly on a lined baking tray and roast for 20 minutes, until slightly golden and tender.
Make the Cheesy Sauce
- In a blender/processor/nutribullet, combine coconut milk (or almond milk mix), nutritional yeast, Dijon mustard, miso paste, garlic powder, onion powder, lemon juice, almond milk, salt & black pepper. Blend until smooth.
- Stir in chopped chives (do not blend them!).
- Whisk tapioca with a little of the sauce, then mix through into the rest of the liquid.
Assemble & Bake
- Place roasted cauliflower in a large baking dish.
- Pour the cheesy sauce over the cauliflower, ensuring it coats evenly.
- In a small bowl, mix almond meal, nutritional yeast, olive oil, smoked paprika, and salt. Sprinkle over the top.
- Bake at 200°C (400°F) for 15-18 minutes, until golden and bubbly.
- For extra crispiness: Finish under the grill (broiler) for 2-3 minutes. (optional)
