Buffalo Cauliflower with Lemon Tahini Sauce

Ingredients
  

For the Buffalo Cauliflower

  • 1 large head of cauliflower cut into bite-sized florets
  • 1/2 cup almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup water
  • 1/4 cup hot sauce low sugar, good oil
  • 2 tbsp melted coconut oil
  • salt and pepper to taste

Lemon Tahini Sauce

  • 1/4 cup tahini
  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1/2 tsp smoked paprika
  • juice of 1 lemon
  • water, to thin
  • salt and pepper to taste

Instructions
 

Prepare the Air Fryer

  • Preheat the air fryer to 200°C (400°F)

Make the Cauliflower Batter

  • In a large bowl, whisk together almond flour, garlic powder, paprika, salt, and pepper.
  • Add water gradually and mix until a thick batter forms. The consistency should allow it to coat the cauliflower evenly without dripping.

Coat the Cauliflower

  • Dip each cauliflower floret into the batter, ensuring even coverage.
  • Lightly spray the air fryer basket with oil and arrange the coated cauliflower in a single layer, ensuring the pieces don’t touch.

Air-Fry Until Crispy

  • Air-fry at 200°C (400°F) for 12-15 minutes, shaking halfway, until golden brown and crispy.

Make the Buffalo Sauce

  • While the cauliflower is air frying, mix hot sauce and melted coconut oil in a large bowl.

Toss & Air-Fry Again

  • Remove the crispy cauliflower from the air fryer and toss it in the buffalo sauce until evenly coated.
  • Return the cauliflower to the air fryer and cook for 2-3 more minutes to help the sauce set.

Prepare the Lemon Tahini Sauce

  • In a bowl, whisk together tahini, lemon juice, olive oil, minced garlic, and smoked paprika.
  • Add water gradually, whisking until you reach a smooth, pourable consistency.

Serve & Enjoy!

  • Drizzle lemon tahini sauce over the buffalo cauliflower bites.
  • Serve immediately with extra tahini sauce, celery sticks, or a green salad!
