Ingredients
  

For the Salad

  • 1 cup baby spinach leaves
  • 1/2 cup mixed greens
  • 1/2 avocado sliced
  • 1/2 cucumber sliced
  • 1 carrot shredded
  • boiled egg (optional)
  • sesame seeds to serve
  • spring onion to serve

For the Green Tea Dressing

  • 1/4 cup brewed green tea cooled
  • 1 tbsp rice vinegar
  • 1 tsp tamari
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1/2 tsp matcha powder
  • salt and pepper to taste

Instructions
 

Prepare the Dressing

  • In a small bowl, whisk together the brewed green tea, rice vinegar, tamari, sesame oil, grated ginger, matcha powder, salt, and black pepper.
  • Taste and adjust seasoning as needed.

Assemble the Salad

  • In a large bowl, combine baby spinach, mixed greens, sliced avocado, cucumber, shredded carrots, and egg (if using).
  • Toss gently to distribute the ingredients.

Dress & Serve

  • Drizzle the green tea dressing over the salad and toss lightly to coat.
  • Sprinkle with sesame seeds for an added crunch.
