For the Salad
- 1 cup baby spinach leaves
- 1/2 cup mixed greens
- 1/2 avocado sliced
- 1/2 cucumber sliced
- 1 carrot shredded
- boiled egg (optional)
- sesame seeds to serve
- spring onion to serve
For the Green Tea Dressing
- 1/4 cup brewed green tea cooled
- 1 tbsp rice vinegar
- 1 tsp tamari
- 1 tsp sesame oil
- 1 tsp grated ginger
- 1/2 tsp matcha powder
- salt and pepper to taste
Prepare the Dressing
In a small bowl, whisk together the brewed green tea, rice vinegar, tamari, sesame oil, grated ginger, matcha powder, salt, and black pepper.
Taste and adjust seasoning as needed.
Assemble the Salad
